What is real ale? Today, as we speak of ale we mean a traditional top fermented beer. Cask conditioned ale, or real ale, differs from so called brewery conditioned ales. The ale is prepared for serving in the pub cellar. This means that we make sure that the most vigorous fermenting has tamed, the carbon dioxide level is pleasent, the ale has dropped bright, and of course that the taste is as it is supposed to be. Real ale is at it's best consumed within few days from the start of serving for it is nor filtered or pasteurized. Real ale is not driven to bar by gas pressure, it is pumped with a beer engine (pump) or poured straight from the cask. Real ale is packed with all the beauty that the top fermenting gives to an ale. Once you have found it's beauty you will constantly be looking for a new pint. In the UK real ale tradition is preserved by Campaign for Real Ale (CAMRA). |
